A builder dad never really clocks off. He just changes what he is building.

We know the type, because the company was built by one. In 1957, Vincent Buda left his village in Italy, came to Australia, and worked steel by hand to build something his family could stand on.

Site skills that make a better cook.

Crowd control. Managing contractors like he manages hungry tummies at the table.

Precision. Measure twice, cut once. Everything is prepped before it hits the grill.

Improvisation. New guests? No ice? Different meats? No worries. It is chips compared to site.

Perfect timing. Concrete tells you when it is ready. So does a brisket. Patience wins both.

Tool maintenance. He cleans the grill like he cleans his gear. Look after it, it looks after him.

I was a teenager when my brother and I helped build the garage in Hurlstone Park, the same floor Dad worked steel on after hours. He came out from Italy at nineteen with a trade and a strong desire to build something the whole family could stand on.

So to every dad reading this: they're always watching. Give them something worth copying.
